Frat Fajitas

Guess what boys? It’s Tequila Thursday with Tri Delt! Unfortunately, you don’t remember last Tequila Thursday since you consider ramen a substitute for dinner. Well guess what? You threw up on one of the babies and now the whole pledge class is bound to avoid you like the backwash at the bottom of a $10 handle of vodka. Don’t you fear! Get in the mood early with some fajitas to fill you up and prepare you for the onslaught of Jose coming your way. With an awesome marinade provided by none other than Paula Deen, these fajitas are so good you might even remember when you eat the leftovers at 2 am.

Ingredients:

For your choice of meat (chicken or steak)

1/4 cup vegetable oil, divided
3 tablespoons lemon juice
1 garlic clove, minced
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
Dash hot sauce
Salt
Freshly ground black pepper

For vegetables

2 teaspoons vegetable oil
1 Red onion (any onions are fine)
1 green bell pepper
1 red bell pepper
1 teaspoon of soy sauce

Additional Components:

Better Black Beans (Link to my recipe , high recommended addition)
Tortillas
Salsa
Mexican cheese

Cooking:

For meat:

1. Mix all ingredients, including your choice of protein, in a resealable bag. Let marinate for 20 minutes. The longer you let it marinate the better the taste.

2. The best way to cook the protein is on the grill. If you are grilling, grill the meat 4 minutes per side on medium high heat and check to see if it is cooked through. If you are pan frying, cook the meat around 5 minutes per side on medium high heat.

For Vegetables:

1. Heat up the oil on medium to medium high heat

2. Sauté the vegetables in the oil for about 3 minutes. Add the soy sauce and continue to sauté until the vegetables are soft.

Putting it together:

Finally, it’s time to put it all together. Get some tortillas and load it up with the meat, vegetables, salsa, black beans, and cheese. Feel free to squeeze some lime juice on top of it. Wrap it up and enjoy the start to a (hopefully) great night.
