Chipotle Style Chicken

Well it’s rush. There’s nothing worse than having to ask what sports some random freshman played in high school for two weeks straight. Having forced conversations at parties gets old real fast and the school is pushing for “sober” events to make it seem like frats do other things besides drinking. Well you obviously have other hobbies besides drinking…eating and taking naps. In terms of rush events, something tells me a nap event wouldn’t make too many kids want to join. So you come up with a brilliant scheme. Why don’t we have Chipotle cater a dinner at the house? Free Chipotle and you can sneak out right after you’re done. Everyone wins! Except the President and the Rush Chair who have to talk to the rushes but whatever they signed up for it…

There is a moment every college student finds true love. And that would be after the first bite of a Chipotle burrito. There is nothing better in the world than stumbling into a Chipotle and ordering a gigantic burrito after six hours of day drinking. The dirty stares you get from the employees after asking for your burrito to be mixed is priceless every time. But wouldn’t it be great to be able to make as much as you want at home?

If you’re willing to pick up one special ingredient, you can marinate a whole chicken breast or steak in the same marinade Chipotle uses. Imagine having a whole Chipotle chicken to yourself. Well dreams can become a reality with this recipe. Hey you can even tell a rush you invented Chipotle. They’ll believe anything to get a bid.

Ingredients:
2 chicken breasts
1 (7 ounce) can chipotle pepper in adobo sauce (pic below)

1 teaspoon black pepper
2 teaspoons cumin powder
1 Tablespoon dried or fresh oregano
6 cloves of garlic minced
1 teaspoon of salt
2 Tablespoons vegetable oil

Marinade:

1. Ideally combine all the ingredients in a food processor, but if you don’t have one add all the ingredients except the chicken and oil into a bowl.

2. Whisk together and attempt to combine the mixture until it is smooth.

3. Take your chicken and stab it with a fork in multiple spots so that the marinade can be absorbed better.

4. Pour the marinade over the chicken in a resealable container and let marinate in the refrigerator for at least an hour, but no more than a day. The longer you can let it marinate, the better.

Cooking:

1. Heat up the oil in a pan on medium-high heat.

2. Add the chicken and place a brick covered in tin foil or another heavy object to weigh down the chicken. This will get the skin nice and tender.

3. Cook 4 minutes a side until skin is dark, but not burnt.

4. Serve with rice and beans or make it a burrito like actual chipotle.
