Arroz Con Pollo

So you’ve had your eye on that cute Spanish chick in Alpha Phi, but you’re unsure how to impress her? Instead of your usual game of impressing sorority girls by bragging about your two touchdowns earlier against Sig Ep in intramural football, try a little Spanish cooking for your new amore. Nothing impresses girls more than faking that you actually picked up some culture while you “studied” abroad in Barcelona.

Ingredients:

Chicken

2 chicken breasts – each cut into 4 pieces
2 Tablespoons of olive oil or any cooking oil
salt and pepper for seasoning
paprika for seasoning (optional)
dried herbs (optional)

Rice

2 Tablespoons of olive oil or any cooking oil
1 onions chopped finely
3 cloves of garlic
1 small red pepper cut in long strips
1.5 cups of rice
3 cups of chicken stock
2 tomatoes diced or 1 400g can of fresh diced tomatoes
1 teaspoon of salt and pepper
1 teaspoon of cumin
1/4 teaspoon ground cayenne pepper (optional)
red chili flakes (optional)
oregano (optional)

Cooking

Chicken:

1. Any frat bro that ever hit the gym knows how to whip up the quintessential protein-full chicken breast. This recipe is no different.  Begin by heating up the oil to medium-hot in a pan on the stove. Season the chicken with salt and pepper (paprika if available) and cook 3-4 minute per side or until brown. The chicken does not need to be completely cooked because it will also cook in the rice. When done, place the chicken off to the side temporarily.

2. Now pour the remaining oil in the pan and begin sautéing in the garlic and onions. This should take about a minute and a half and will become evident when the garlic turns golden brown and the onions become clear. Add the red bell pepper and continue to sauté for about a minute. Then place the chicken back into the pan.

3. Next, pour in the chicken stock, cumin and tomatoes into the pot. Also, add cayenne powder now if you desire a more spicy dish.

4. Bring the chicken stock to a boil. Once it starts bubbling, reduce the heat to a simmer and cover the pan. The rice needs approximately 20 minutes to cook, so go play a couple rounds of beer pong while you wait.

5. Check to make sure the rice is cooked, then throw on some jams and enjoy this meal. Don’t make it too good or she might get clingy.
